Today I introduced another vegetable into baby’s diet: Okinawan sweet potato (beni imo).
The preparation was basically the same as the butternut squash, except I noticed that it took much more liquid to thin out the sweet potato to attain the proper consistency. Well over a cup of water was used in addition to the small amount of liquid that was reserved after the steaming process. NOTE: According to the Wholesome Baby Food website, it’s best to thin out potatoes before freezing.
I stored them in Baby Cubes, BPA-free storage containers in addition to the OXO Good Grips covered ice trays (purchased at Simply Organized, Kapolei).

The verdict on the Okinawan sweet potato? Baby Champuru approved! (Although it might not be obvious from the photo above.) Hey, the girl is half Okinawan. Beni imo should be one of her favorites just by default!
